- Prepare Pea soup. Soak the
yellow split pea in water for one to two hours and discard the
water. Fill a saucepan with 4 cup of water and bring to a boil.
Place the yellow split pea in the saucepan. Again bring to a boil
and reduce the heat to medium-low. Simmer for 45 minutes. Then turn
off the heat and set aside.
- Peel and diced the sweet
potato (~0.1 inch).
- Rinse and diced the celery
(~0.2 inch).
- Rinse and diced the tomato
(~0.6 inch).
- Prepare coconut milk,
following the directions on the packaging of coconut milk powder.
- Prepare sauce 1. In a bowl,
combine the soy sauce, brown sugar, Worcestershire sauce, cooking
wine and lotus root starch. Stir well and set aside.
- Prepare sauce 2. In a small
bowl, mix in 1 tsp. of lotus root starch, 1 tsp. of sweet potato
starch and 1/4 cup of water. Stir well and set aside.
- Bring 3 cup of water to a
boil in a saucepan. Add tomato sauce and the diced sweet potato
dices, simmer for 30 minutes over medium-low heat. Place the diced
tomato and celery into the soup, and simmer for another 15 minutes.
Then stir in the prepared pea soup, reduce the heat to low and ready
for seasoning.
- In a frying pan over high
heat add 1 Tsp. of olive oil and ginger slices. Saute until
fragrant. Then turn off the heat and discard the ginger slices. Pour
the oil into the tomato soup. Stir in sauce 1 and coconut milk, mix
well and turn off the heat.
- Just before serving,
bringing the soup to a boil and stir in sauce 2.
